The Scottish Cafe & Restaurant in Edinburgh

The Scottish Cafe & Restaurant is a successful collaboration with the Scottish National Gallery and a Green Tourism Gold Star award holder. This dining venue in the heart of Edinburgh is popular with gallery visitors as well as a destination restaurant in its own right.

Committed to high environmental standards and using local produce the restaurant sources 90% of ingredients used from more than 60 Scottish suppliers in addition to having its own kitchen garden.

Improvements the restaurant has made include the following:

Energy

  • Installation of LED light bulbs
  • Sensor lighting in less used areas 
  • Sensor taps installed in public bathrooms to reduce water wastage

Procurement

  • Using suppliers with similarly high standards in terms of animal welfare, ethical and environmental policies
  • Sourcing produce from local or Scottish suppliers wherever possible
  • Kitchen vegetable garden on-site
  • Biodegradable chemicals used where possible

Sustainability

  • Price reduction offered with customers own takeaway containers
  • Best value mug scheme to decrease disposable cup use
  • 'FOOD TO GO' programme to minimise waste use
  • Seasonal menu to maximise use of short season crops
  • Recycling waste oils and waste chemicals

And the restaurant’s notable commitment to sustainability and high standards includes engaging with staff, customers and other industry bodies by:

  • Holding monthly food training on site with all staff on menu changes, product sourcing policy and seasonal availability
  • Having external audits conducted throughout the year
  • Reviewing and rewarding staff’s energy-saving achievements
  • Constantly assessing waste and recycling practices to reduce waste and costs
  • Developing menus with staff input on food wastage and portion control
  • Aligning with other industry bodies to learn from or teach e.g. Slow Food, the Slow Food chefs alliance, Zero Waste Scotland, the Green Tourism Business Scheme.
